Duck Sausage Recipe needed

I have seen references on here to duck sausage many times, I believe Jorge was quite adept at making this.

Would appreciate a simple layman's recipe to try. (This means if Sen~or Nosoypato posts something it will have to be dumbed down for me, but still appreciated.)

The other night I took 3 Filets d'Ringer and chopped them in my very small food processor with two slices of bacon. Threw in portions of red pepper flakes, ground black pepper, sage, basil, and oregano. This made two 1/4 lb patties -- just an experiment on a whim.

IT WAS INCREDIBLE!

Since my food processor is not an ideal tool for this, I plan to acquire one of the old-time meat grinders like Cabela's sells and do more of my duck this way next season. I do not want to fool with casings and prefer patty sausage anyway.

Any pointers on equipment you guys use? What form/cut of pork do you use? Can you get it at a regular grocery?

We've (my brother and I) been using our processor that does our deer. He's creative and interested in new recipes.

If you are planning on making a go of it yourself then I'm pretty sure everything you need will be at Cabelas or Basspro. Unless you're going into business you should be fine with their product lines.

I will add that I have been interested in doing some of my duck that way for some time now but haven't gotten around to it.

My plan is to have the duck meat coarse ground and to be heavy on the bacon, pancetta, or pork fat and maybe add some dried fruit, or raisins, ets than putting it in a casing with similar spices that you have mentioned and serving it with a reduction type of sauce and sauerkraut. Haven't gotten around to it yet but maybe that will give you some ideas.

I don't have a specific recipe. I usually just add the appropriate spices (lots of salt) and I use pork suet as a fat source. Best thing to do is make a small batch and take small samples and cook then taste till you get what you want. Then take the ingredient list and measurements to the batch level and start grinding.

Greg - funny you should ask since yesterday I put away all my dekes and sorted them. Those old dekes are still the best built and toughest I have ever owned - none have sunk from a pellet hole nor needed repainting and no deterioration of the material.

G&H did it right. You can't find them now I think. I have looked on Ebay, etc. a few times.

P.s. They still have your name on the keels so when I wind them up I remember buying them.

They were great dekes for sure. I don't know if I'll ever use the ones I have again. Prob should sell the rest of them to you too.

I hate to help a duck hunter quit doing it, but I will take them if you want to get rid of them. My last three seasons have been awful so I might be crazy.

PM me if you do want to sell them, it might just take me a few weeks to get up there to Tville or Ochlocknee with all I have going on.
